The wines are elaborated in vats before the malo-lactic fermentations and oak is used to polish them off instead of masking their characteristics »

Yves : « I want to make wines that aren't perfect, but which reflect and respect their terroir and their vintage. As a result, the quality of the vineyard's grapes plays a very important role. After that, we make wine according to simple methods, all the while respecting tradition. We don't add yeast, or use modern winegrowing techniques or products. My objective is that of producing boutique wines, reflecting their origin and my sensibility »
